The word GOD in the motto " In God We Trust" appears in higher relief than the other words on Peace dollars made in 1926.

This is my opinion only. It might be way off base and it might be an just an error. The word GOD is in high relief. The reason for that is that the the U. S. Mint's chief engraver at that time was John Ray Sinnock who took over the position in 1925 was trying to give is opinion on the Scopes monkey trial that was going on at the time.

The Scopes Trial of 1925 pitted lawyers William Jennings Bryan against Clarence Darrow representing teacher John T. Scopes in an American court case that tested a law passed on March 13, 1925, which forbade the teaching, in any state-funded educational establishment in Tennessee, of "any theory that denies the story of the Divine Creation of man as taught in the Bible, and to teach instead that man has descended from a lower order of animals." This is often interpreted as meaning that the law forbade the teaching of any aspect of evolution. It has often been called the "Scopes Monkey Trial".

The word "God" in the motto is of strikingly higher relief than the rest of the motto due to special engraving of the master die. Speculation abounds that this was an intentional commentary on the highly publicized "Scopes" trial which had recently concluded.
