i keep hearing "white balance" i have a S5 IS , and i want to make sure i know what im doing. where do i find the section to change such stuff?

Check on-line for the manual at canon's website Ant. You should find one there. I also think that your camera would have to be in the "P" program mode in order for you to access this function. I have an S3 and not sure if it works the same, but in the "P" mode, you can hit your "FUNC" button and should be able to arrow up and down to different mode changes.
