The stuff you circled on the 8s in the original picture is machine doubling or ejection doubling that plagues 1881-S (and 82-S). At best, it doesn't affect the VAM number of the coin. At worst, it obscures actual doubling on the digits making it more difficult to attribute.

I agree 100%, and was preparing to type the same response when I saw John had already answered.

Does anyone know how machine doubling happens?

Stupid question, I'm sure someone does.

Better question, can someone help paint the picture to me as to how machine doubling happens?

The "shearing" effect you see on the date of 81-S's is likely due to insufficient clearance between the coin and the hammer die when it is starting to be ejected from the coining chamber. The digits get hung up on the digits in the die for a moment and become sheared, hence the term "ejection doubling" (which is technically damage).
