Depends on the service, but NGC follows the times on their website pretty closely.

I sent in 5 coins two weeks ago (arriving Thursday of that week)on their economy plan, which called for ten business days to grade. I got an e-mail yesterday saying the coins had been shipped -- ten days on the nose. Can't speak for PCGS or any of the others...
